Avocado Omelette
Nothing is better than to start a day with a good breakfast. When it comes to having a healthy and exciting breakfast omelettes always come to mind.
Ingredients:
3 large eggs
1/2 avocado (cut into slices)
1/2 pepper (cut into slices)
1/2 tomato (cut into slices)
1/3 onion (shop in small pieces)
4-5 slices of aged cheese (e.g. manchego)
Preparation:
1- Spray frying pan with cooking spray or use a teaspoon of olive oil.
2- Over low heat quickly saute pepper, onion and tomato.
3- Pour beaten eggs into pan.
4-Cover for 2 - 3 minutes over medium heat.
5- Flip eggs over and layer cooked side with slices of avocado, pepper, tomato, onion and cheese.
6- Fold omelette onto itself and cook each side again for 1 minute each side.
7- Serve and decorate with slice of smoked salmon.
Pairing: This is a perfect occasion for an Spicy Bloody Mary.
